Series premiere for Discovery Channel's Brew Masters is 10 pm, Nov 21. The series is hosted by non other than Dogfish Head's Sammy Calagione.

The first episode was mostly a commercial for Dogfish Head Brewery and its mantra of producing Off-Centered Ales for Off-Centered People. I enjoyed the behind the scenes insights into the challenges of brewing an inventive concept beer like Bitches Brew on a tight schedule. Stuff (glue spills and missing pins) happens!
ReplyDeleteEpisode 2 was all about chicha, a style of beer in which the starch is broken down by human saliva. Sam goes to Peru in search of authentic ingredients and techniques, then replicates those back in Milton for a clientele that was maybe just barely off-centered enough. I would try chicha. I think the lesson learned is that there are a million beers, and we should try them all.

ReplyDeleteLast night's episode was about a collaboration between DFH and New Zealand's Epic. The main story was about designing a beer around the tamarillo, a kind of tree tomato native to New Zealand. They entered the beer, a porter which they named Portarillo, in NZ's Beervana competition. The B story involved a problem with bottling Punkin: the supplier shipped bottles made for twist off caps.
The show continues to be part DFH infomercial, part Sam Calagione bio, part day in the life of a brewer, and part Thirsty Traveler. I enjoyed the depiction of art, marketing, chemistry, and personalities--so many things that contribute to what fills our glasses when we pour.

When a company approaches Sam about making a beer out of cedar scraps salvaged from their hand-made surfboards, Dogfish jumps at the chance to create their first "cedar-fied" beer. But, the team faces a major setback when 9,000 gallons of their signature beer, 120 Minute IPA, gets flagged by Quality Control.

ANCIENT ALE
Dogfish Head is about to brew a batch of "Chateau Jihau", a 9000 year-old recipe based on pottery jars recovered from a village in Northern China. Meanwhile, the B-story: Sam heads to Egypt in order to bring back to life beer from one of man's earliest civilizations.
